I made this yummy soup the other day and froze half of it in a gallon size zip lock bag right away. It makes a huge batch! I am trying my hand at freezing more meals as the girls are not big leftover eaters right now. It never made a difference before, but I guess they are getting pickier (or more like their daddy).
This was an easy crock pot recipe and I don't know where I got it from other than online somewhere. I am terrible about writing that stuff down.
Taco Soup
1 lb browned hamburger
2 cans kidney beans (I used whatever beans I had)
2 cans pinto beans (again I just grabbed beans)
2 cans corn
1 can diced tomatoes and chilies
1 lg can diced tomatoes (I used a quart of my canned garden tomatoes)
1 pkg taco seasoning
1 pkg ranch dressing mix
Shredded cheese, sour cream, and chips
Add browned meat to crockpot. Sprinkle seasoning on meat. Drain, rinse and add beans. Add entire contects of corn and tomato cans. Stir. Cover and cook 6-8 hours on low or high 4-5 hours.
Easy and yummy. And you can end up with a frozen portion for later!
