2012 HVR Pheasant hunt...

Pheasant season opened this past weekend in ND and runs until the beginning of January.  It is a long season and I must say we never hunt more than the first few weeks.  Then it just starts to get COLD.  The bag limit is 3 per day and we really don't eat all that much pheasant.

It just seems there aren't that many great ways to prepare it.  Or maybe I just haven't discovered any good ways to prepare it yet.  I usually just boil it and substitute it for chicken in my creamy enchilada recipe.  No one usually even knows the difference. 

Today I have 3 breasts marinating in a simple wine/oil/seasoning marinade.  Then I'll roast them.  We'll see how it turns out.  If any of you have some good pheasant recipes let me know.  I have 13 in the freezer right now (the guys didn't want to take them all).  I wonder if that is legal.  Well, actually, between the two of us we could have 18 as of today so we are good...

Don't forget the 3 cutest little girls!  Lots of dads and grandpas in this picture that loved having the girls come out and check out the pheasants.  We definitely have some hunters on our hands!

During a discussion with a friend about "eating local" she told me that her family eats over 90% local.  I found that quite amazing.  Really, how could you do that?  Sorry, but I enjoy letting my girls eat bananas and pineapple and fish and lots of other things we can't get out here in western ND.  But to each their own.  Everyone has the right to food choices.  That is one of the glorious things about living in the good ol' U S of A.  I won't judge you by your choice as long as you don't try to limit my food choices.

She made mention that her husband hunts so they have a supply of local venison.  Now, I never really looked at it from that standpoint.  True.  Very true.

Let's take a look at the meat in my freezer. 

Beef - home grown in the feedlot up the hill

Venison - 2 deer from the husband and 1 from me made into lots of country style sausage and summer sausage

Fish - I'm sure it was farmed somewhere (THANKS fish farmer!)

Chicken - bought and injected with some water (I keep thinking about raising them, but then I keep having children.  And I'd need to clean out the coop.)

Looks like we need to do some more fishing in the summer.  If I do enough pheasant hunting maybe I could replace all the chicken with pheasant and I'd be doing really good at "eating local."
