Hunk of meat Monday...

Hamburger is my go to meat.  I pull it out of the freezer and then figure out what I am going to have for supper after wandering around looking through my pantry to see what all I have to through together.

This week I dug into chest freezer number 2 and found a pork loin.  For the past almost 3 years chest freezer number 2 has been used for storing tomatoes, peppers and breast milk.  I like to buy the whole pork loin when they are on sale, cut it into 3 or 4 chunks and freeze.  I won't tell you how old this loin is.  It has been hiding for a while.  It got lost among all that breast milk.  I'm looking forward to the steaks I found down there too.

I pulled out a favorite crockpot recipe book and found of pull pork recipe.

 I mixed 1/4 cup salsa with 2 T corn starch and pour that on the bottom.  Then I poured about 1 cup of salsa over the top.  Now I used my homemade salsa and it happened to be a hot batch so this really had some zip.

Then I put it on low for about 8 hours (165 degrees when I pulled it out). 
Then I shredded the meat.  And talk about juicy!  We made this into pork burritos.  I set aside some of the meat for the kids since the salsa was so hot.  Then I threw all of the meat back into the salsa juices in the crockpot. 

Leftovers have included pork tacos and scambled eggs with pork (the salsa had just the right amount of kick for this).
