Abundance...

When you think of vegetables in the garden which one do you think of that always ends up producing WAY TOO much?

Cucumbers?
Lettuce?
Tomatoes?
Peppers?
Zucchini?

I should say that I am lucky only 2 zucchini plants came up.  Well, someone in my house should be grateful only 2 came up, but HE really wanted to pull them out as soon as he found out that they were zucchini and not his precious cucumbers.

He's afraid that zucchini are now going to show up hidden in everything he eats.

Well, he's probably right.

I won't go for the obvious chocolate zucchini cake.  He'll be prepared for that and he doesn't even like chocolate.

This topic started with me picking the first zucchini of the year today and there are lots more to come!  I was making a casserole for supper and slipped the zucchini right in there. 

If it turns out good, I'll repost this with a picture.  Here is the very, very complex recipe.

Squash 1.5 lbs of hamburger in bottom of 9x13 casserole dish.
Top with 1 grated zucchini
Spread 1 can cream of mushroom soup on top
Sprinkle 2 big handfuls of cheese
Dump some frozen hashbrowns on top
Bake 350 degrees for 45 minutes covered and 15 mintues uncovered.

What do you do with all that zucchini?
